Overview of common therapeutic diets and applications to meal planning. Includes consistency modifications, sodium controlled, fat and/or cholesterol controlled, diabetic and/or calorie controlled. Emphasis on use of diet manuals and food composition references. Includes computer calculations of vitamin, mineral, protein, carbohydrate, fat, and cholesterol content.
